I have another recipe that I really like. It uses some of those beans that I canned. It's easy . . . and it doesn't take very long to make, which makes it great!!
Stuffed Green Peppers
1 pkg Spanish Rice and ingredients to make it
Green Peppers
1 lb hamburger
1 c corn
1 c black or pinto beans
cheese
Make rice according to directions on package.
Brown hamburger. Add rice, corn and beans. (You can use as much or as little corn and beans as you would like.)
Cut the tops off of green peppers and clean out the inside. Boil peppers for 5 minutes.
Put peppers in casserole dish. Fill with hamburger/rice mixture. Sprinkle with cheese.
Bake at 350 degrees until cheese is melted. Approx. 20 mins.
This dish can be made without the peppers. I don't make peppers for my kids, it would just be wasted food. I do think the peppers add a good flavor.
